shortening1 cup
eggs5
flour2.25 cups
lemon juice0.25 cup
lemon rind1 tablespoon
salt8 servings
sugar1.5 cups
water2 tablespoons
wheat germ0.5 cup

Instructions
Preheat oven to 350F.Sift the flour, baking soda, baking powder and salt into bowl.
Using a pastry blender, cut the shortening into the flour as though making a pie crust.Stir in sugar, wheat germ, lemon rind and eggs.Combine lemon juice with water and stir in.
Mix enough to moisten the dry ingredients.
Pour batter into a greased loaf pan and bake for 1 hour or until cake tester or wooden toothpick inserted in center comes out clean.
