Piri-piri chicken and slaw

Ingredients

  • Chicken
    Chicken1.5kg
  • Red Chilli
    Red Chilli3 chopped
  • Garlic
    Garlic2 cloves
  • Ginger
    Ginger1 tsp
  • Dried Oregano
    Dried Oregano1 tsp
  • Coriander
    Coriander1 tsp
  • Paprika
    Paprika1 tsp
  • Red Wine Vinegar
    Red Wine Vinegar2 tbs
  • Oil
    Oil2 tbs
  • Red Onions
    Red Onions1 sliced
  • Carrots
    Carrots2
  • Beetroot
    Beetroot1
  • Cabbage
    Cabbage4 leaves
  • Mayonnaise
    Mayonnaise2 tbs
  • Greek Yogurt
    Greek Yogurt2 tbs
  • Red Wine Vinegar
    Red Wine Vinegar2 tbs
  • Cumin Seeds
    Cumin Seeds1 tsp

Instructions

Whizz together all of the marinade ingredients in a small food processor.

Rub the marinade onto the chicken and leave for 1 hour at room temperature.

Heat the oven to 190C/fan 170C/gas 5.

Put the chicken in a roasting tray and cook for 1 hour 20 minutes.

Rest under loose foil for 20 minutes.

While the chicken is resting, mix together the slaw ingredients and season.

Serve the chicken with slaw, fries and condiments.
