
Citrusy Pecan Garbanzo Couscous: A Salad For Cold Weather

Ingredients
garbanzo beans1 ounce
currants2 tablespoons
green onions2
ground cumin0.5 teaspoon
israeli couscous1 cup
juice of orange1
olive oil1 tablespoon
parsley2 servings
pecans0.25 cup
bell pepper1 piece
rice vinegar1 teaspoon
salt and pepper2 servings
paprika0.125 teaspoon
Instructions
Prepare couscous according to package instructions.
Meanwhile combine all remaining ingredients in a medium mixing bowl.
Drain couscous and add to bowl while still hot.
Thoroughly mix all ingredients.
Taste and adjust seasonings.
Serve warm.
