
Cinnamon Mocha Quick Bread

Ingredients
flour4 cups
granulated sugar2 cups
coffee granules3 teaspoons
cocoa1 tablespoon
baking soda2 teaspoons
salt1 teaspoon
eggs2
buttermilk2 cups
canola oil0.5 cup
ground cinnamon3 teaspoons
optional: raisins0.5 cup
Instructions
In a bowl, combine the flour, 1 1/2 cups sugar, coffee granules, cocoa, baking soda, and salt.
In a small bowl, whisk the eggs, buttermilk and oil.
Stir into the dry ingredients just until moistened.
(Optional -- fold in raisins) 2.
Transfer a fourth of the batter into each of two greased 8"x4" loaf pans.
Combine cinnamon and remaining sugar; sprinkle half over batter in each loaf pan.
Repeat layers.
Cut through batter with a knife to swirl.
Bake at 350 degrees for 55 to 60 minutes or until a toothpick inserted near the center comes out clean.
Cool in pans for 10 minutes; remove from pans to wire racks to cool completely.
